Dates Peanut Butter and Chocolate Bites

These bite sized treats are a perfect combination of sweet and savory, with the creamy peanut butter and rich dark chocolate complementing the natural sweetness of dates. Easy to make and requiring no baking, they’re ideal for a quick dessert or snack.

Ingredients:

  • 1 cup pitted dates
  • 1/2 cup creamy peanut butter
  • 1/2 cup dark chocolate chips (at least 70% cocoa)
  • 1 tablespoon butter

Instructions:

  1. Line a baking sheet or plate with parchment paper or a glass dish.
  2. Create a layer of dates on the prepared surface. You can chop them into smaller pieces if you prefer a more uniform base.
  3. Spread the peanut butter evenly over the dates.
  4. In a small bowl, add the chocolate as chunks and the butter, heat slowly in the microwave for 30 seconds a time until melted. I did it 30 seconds, stirred then another 30 seconds was enough.
  5. Pour the melted chocolate mixture over the peanut butter layer.
  6. Refrigerate for at least 30 minutes or until the chocolate is set.
  7. Cut into bars or bite-sized pieces. Serve chilled.

Tips and Variations:

  • Use high-quality dark chocolate for the best flavor.
  • Experiment with different types of nut butter, like almond or cashew, for a unique twist.
  • Add a sprinkle of sea salt or chopped nuts on top of the chocolate layer for extra texture and flavor.
  • Store in an airtight container in the fridge for up to 5 days.
