Fry the eggs in a pan with a little oil or non-stick spray until the whites are set and the yolks are cooked to your desired doneness.
Serve the rice mixture topped with crispy bacon, fried eggs, and a sprinkle of salt and pepper and optional paprika.
Ingredient Swap Ideas:
- Use brown rice or quinoa instead of white rice for a nuttier flavor and extra nutrition.
- Add diced ham, cooked sausage, or grilled chicken to the rice mixture for added protein.
- Replace peas and sweetcorn with other vegetables like diced bell peppers, carrots, or broccoli.
- Try different seasonings on the bacon, such as smoked paprika or chili powder, for a unique flavor.
