Cuisine American
- 1 cup white rice
- 1/2 cup frozen peas
- 1/2 cup frozen sweetcorn
- 4-6 slices bacon
- 2-4 eggs
- salt and pepper to taste
- paprika optional
Cook the white rice according to package instructions. Mix in frozen peas and sweetcorn, and heat through until they're tender and well combined.
Preheat the air fryer to 200°C (400°F). Cook the bacon slices in batches if necessary, for about 5-7 minutes or until crispy.
Fry the eggs in a pan with a little oil or non-stick spray until the whites are set and the yolks are cooked to your desired doneness.
Serve the rice mixture topped with crispy bacon, fried eggs, and a sprinkle of salt and pepper and optional paprika.
Ingredient Swap Ideas:
- Use brown rice or quinoa instead of white rice for a nuttier flavor and extra nutrition.
- Add diced ham, cooked sausage, or grilled chicken to the rice mixture for added protein.
- Replace peas and sweetcorn with other vegetables like diced bell peppers, carrots, or broccoli.
- Try different seasonings on the bacon, such as smoked paprika or chili powder, for a unique flavor.
- Use different types of eggs, like poached or scrambled, for a change of pace.
- Add some shredded cheese, like cheddar or feta, on top for an extra burst of flavor.
