The combination of tender chicken, sweet apple, carrots, honey, and warm spices like cinnamon and cumin creates a dish that’s both comforting and a little unexpected. And yes it's convenient as it starts with frozen chicken breasts!

- 2 large frozen chicken breasts
- 1 large apple cored and chopped
- 2 small carrots chopped
- ½ cup honey
- 1 tsp dried cinnamon
- ½ tsp dried cumin
- Salt to taste (I used a generous sprinkle)
- Boiling water approx. 1 inch at the bottom of the pressure cooker
Start with the chicken: Place the frozen chicken breasts at the bottom of your pressure cooker insert.
Add the flavor: Sprinkle in the cinnamon, cumin, and salt directly over the chicken.
Layer the veggies: Add chopped apple and carrots on top of the seasoned chicken.
Pour in the honey: Drizzle the honey evenly over everything.
Add hot water: Carefully pour in about an inch of boiling water—just enough to help loosen and steam the chicken. No need to cover everything.
Cook it up: Seal your pressure cooker and cook on high pressure for 10–30 minutes, depending on the size and thickness of your chicken breasts. (Thinner breasts = ~10–15 mins. Thicker ones = closer to 30.)
Natural release: Let the pressure release naturally for 5–10 minutes, then carefully open the lid.
Optional Serving Suggestions:
- Shred the chicken and serve it over rice or mashed sweet potato.
- Drizzle the cooking juices on top for extra flavor.
- Add a dollop of Greek yogurt or a sprinkle of fresh herbs for contrast.
Quick Tip:
For best results, always place the chicken and spices in first, then pile the apples and carrots on top. This helps the flavor soak right into the meat as it cooks.
